Mini Oatmeal-Chocolate Chip Cookies
Our Favorite Cookie Recipe
Mini Oatmeal-Chocolate Chip Cookies
1/2 cup margarine (made with vegetable oil)
1/2 cup canola oil
1/2 cup Splenda Brown Sugar Blend, lightly packed
1/4 cup Splenda Blend for Baking
2 large eggs
1 teaspoon vanilla
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1 tsp. cinnamon
1/2 teaspoon salt
3 cups old-fashioned oats (not instant)
1 cup mini chocolate chips
Directions:
- Preheat oven to 350°.
- In a large bowl, blend margarine, canola oil and sugar together until creamy.
- Add eggs and vanilla, blend well.
- Add remaining ingredients except oats and chips. Mix well.
- Add oats and chips and stir well by hand.
- Drop dough in quarter-size balls onto ungreased cookie sheet.
- Bake 10-12 minutes or until cookies are golden. Note: Watch
cookies carefully: When the top is golden and the edges are firm,
remove from oven and place on wire rack to cool. Cookies will be a
little chewy. For crispier cookies, bake a bit longer.
Makes approximately 4 dozen cookies.
